For the Salad:
- Red Oak Lettuce (approx 2 cups)
- 2 cups cherry tomatoes
- 3-4 snacking cucumbers
- 1 beetroot

For the Garnish:
- chia seeds
- roasted pumpkin seeds
- Feta cheese

For the Green Goddess Dressing:
- 1 tbsp tahini
- 1 handful lemon basil
- 2-3 tbsp yoghurt
- 1 tbsp Apple cider vinegar
- 2-4 Cloves of garlic
- Juice of 1 lemon
- salt and pepper to taste

Slice the snacking cucumbers, beetroot and lettuce into long strips. Halve the cherry tomatoes.

Assemble it and garnish it with the chia, pumpkin seeds and feta cheese.

Pour the dressing over and enjoy:)
