Red Amaranth, known as “chawli" in India, are consumed as green leafy vegetables and its leaves are nutritionally similar to beets, Swiss chard and spinach. They can be sautéed with oil, similarly to spinach, and thrown in to a variety of soups, salads, stir fries, curries, and much more!
